Organic gingerbread

The quickest, yummiest, easiest gingerbread recipe that my family inhales, raw or cooked. As always, I use organic ingredients where possible (flour, milk, butter and raw honey).

ingredients

1 cup plain or spelt flour

45g butter

1/3 cup honey or golden syrup

1 tsp ground ginger

1/2 tsp mixed spice

1/4 tsp ground cloves

1/2 tsp bicarb soda

1 tbsp milk

method

Preheat oven to 180 degrees C. Melt the butter in a pan and add the honey, cook until simmering then remove from heat and allow to cool for 5 mins.

Meanwhile, sift the flour, spices and bicarb soda into a bowl, make a well in the middle and add the milk and butter mix. Stir until combined, then let sit in the fridge for half an hour.

Add a little flour to your bench, roll the batter in your hands, flatten with a roller and cut out biccies. Bake in oven for 8 minutes.
