Supermarket meal 1: Marion’s kitchen thai green curry

One of the best off-the-shelf Supermarket foods for those nights when you really don’t feel like cooking & don’t want to ruin your diet, this Thai Green Curry from Marion’s Kitchen ticks all my nutrition boxes AND tastes amazing. It’s ready in minutes, all you simply add are vegetables and protein (I chose Blue Grenadier fish from Coles). Ingredients below for a one stop shop meal!

Marion’s Kitchen Thai Green Curry is a winner!

ingredients:

  • Marion’s Kitchen Thai Green Curry from Coles or Woolworths

  • a packet of pre-cut stirfry vegetables, or a mix of broccoli, capsicum, cauliflower, eggplant - whatever works for you, and preferably organic

  • protein - 500g of Organic firm tofu OR free range chicken breast, diced, OR organic beef stirfry strips

  • OPTIONAL: 1 packet of Organic brown rice by Sunrice, Vermicelli noodles, or cauliflower rice (either supermarket bought or make your own by steaming cauliflower florets and blending.)

  • Serve and enjoy!
