HEALTHY Tiramisu

I love dessert, and I love breakfast, so here is a delicious, healthy Tiramisu recipe that satisfies both loves! Make it minimum 4 hours in advance before serving.

Ingredients:

1 1/2 cups almond milk - I love the Mandole Orchard Original

1 cup plain Greek yoghurt, like Tamar Valley

2 and 1/2 tbsp pure maple syrup, divided

2 tbsp chia seeds

2 tsp instant organic espresso powder - decaf if you can’t handle caffeine after 12pm like me! I love Fairtrade Organic Decaff

1 tsp organic vanilla extract

Pinch of salt

1 and 1/2 cups rolled oats like these

1 and 1/2 tsp Luka Wellness Superfood Drinking Chocolate or cacao powder

Directions

Step 1:

Whisk almond milk, 1/4 cup yoghurt, 1 1/2 tbsp maple syrup, chia seeds, coffee, vanilla and salt together in a large bowl. Add oats, stir until completely combined, cover and refrigerate for 4 hours up to 4 days.

Step 2

Combine remaining 3/4 cup yoghurt and 1 tbsp maple syrup in a small bowl.

Step 3 - 1 serve

To serve, spoon 2/3 cup oat mix in a bowl. Top with 3 tbsp of the maple syrup yoghurt. Use a fine mesh-sieve to dust with 1/4 tsp of LUKA Wellness/Cacao powder.
