Guilt-free Choccy muffins
I was looking for something tasty but guilt-free to make this Easter when I came across this recipe. I made a few tweaks to make it simpler and healthier, including the addition of Simple Tribes Organic Super Greens Powder found at Coles for a little extra hit of nutrients! It definitely made a difference to the smell of the muffins, but with a slight adjustment to the maple syrup (increase by 1/4 cup if using the powder), the taste was great and my whole family loved them!
Ingredients
1 cup mashed ripe banana (approx 2 bananas)
2 large eggs
1/2 cup tahini
1/3 cup maple syrup
1 tsp vanilla extract
3/4 cup almond meal or flour
1/2 cup cacao
1/4 cup coconut flour
1 tsp bicarb soda
1/4 tsp salt
1/2 cup choc chips (optional - I used good old Cadbury for this because it’s Easter)
1-2tbsp Simple Tribe Organic Super Greens Powder (Optional - increase maple syrup to 1/2 cup if using)
Method
Preheat oven to 180 degreesC and line a 12 cup muffin tin with butter
In a large bowl, add mashed banana, eggs, tahini, maple syrup and vanilla extract. Mix until well combined and smooth.
Add almond flour, cacao and coconut flour, baking soda and salt. Mix ingredients together until well combined. Fold in chocolate chips, reserving a few chocolate chips for sprinkling on top of muffins.
Divide batter evenly between prepared muffin tray. Bake for about 20 minutes or until toothpick inserted into the middle comes out clean. Makes 12 normal size muffins or approx 20 mini muffins.
