Zucchini pancakes with smoked trout & cream cheese

This is not my recipe, it was passed on to me from my bestie as her kiddies love it so much and as my family felt the same way about them I thought I would share them!

These pancakes are not only an easy way to increase veggies in your diet; they’re healthy, high in protein to keep you full for longer, and are enjoyable for the whole family. You can play around with toppings, or just leave them plain. I topped these ones with smoked trout, cream cheese, dill and lemon juice. Enjoy!

Ingredients

1 large zucchini, chopped

50g room temp butter

2 heaped tbsp Greek or natural yoghurt (I use Jalna organics)

3 eggs

1 tsp baking powder

1/2 cup flour of your choice (I used wholemeal spelt for these)

pinch of salt

method

Heat a pan to medium heat with a little butter or olive oil

Add all ingredients to a food processor/blender/Thermomix/stab blender thing and combine until it looks like a green soup.

Pour a ladle/1/2 cup worth of mix into the pan to form pancakes, allow to bubble in the middle before turning (approx 1-2 mins each side).

Serve with topping of choice, or leave plain. Enjoy!
