Peanut butter & banana coconut bread
Increase your fibre and nutrient intake with this gluten-free Peanut Butter & Banana Coconut Bread! Serve warm with lashings of butter and a cup of (my fave) Big Cuppa Organic English Breakfast tea.
ingredients
3 medium ripe bananas, mashed
1 tsp vanilla extract
1/4 cup peanut butter or almond butter
2 eggs
1/2 cup coconut flour
3/4 tsp bicarb soda
1/2 tsp cinnamon
1/4 tsp salt
Optional: I sprinkled cooking chocolate choc chips on top, you could also add them to the mix
method
Preheat the oven to 180degrees C. Line a loaf tin with butter and/or baking paper.
Add mashed banana, vanilla and peanut butter to a bowl and mix thoroughly. Add the rest and mix together. If adding choc chips, fold them in.
Bake for 25-35 mins and test with a skewer. Cool in pan for 20 mins before turning out onto a wire rack, slicing and serving. Keep in the fridge if it hasn’t been devoured after a few days.
